From farmer Jorge Rivera of Santa Rosa Farms, this is an easy drinking cup with a lot nuanced complexity, that becomes more pronounced with each successive sip.
We have this offering as a result of a 10 year coffee relationship with Finca Santa Rosa, owned and operated by our good friend Jorge Rivera. His father founded the farm in 1979, and it was a bit of a rough start. A decade long civil war broke out in El Salvador that year, and coffee prices went down to catastrophic lows. As a result, the coffee farm was converted into a much easier to maintain pine tree plantation. But the brothers never gave up on their dream of operating a truly great specialty coffee farm.
After many years and the end of the war, El Salvador hosted its first Cup of Excellence competition, and the brothers decided to finally plant the coffee they had wanted to for all these years. They also maintained many of the trees on the land to provide the necessary shade for the coffee. This makes the farm look very unique too, with the coffee blossoms interspersed between the tall pines.
The farm is also unique because it exclusively grows pacamara varietals, which were bred specifically for this farm.
The farm is located on the slopes of El Pital, one of El Salvador's highest peaks.
