This is the washed process coffee that we use in the shop for both our cold brew and nitro.
This Tablòn Valencia coffee is grown on Finca Paraiso in El Salvador owned by Claudia Mathies Rank. The farm has been in her family for 3 generations.
We visited El Salvador early Spring 2019, and spent time with both Aida and Claudia. On our visit to Paraiso, we explored the nursery and farm learning what we could from farmers and pickers.
Like many coffee farms they are constantly fighting off coffee borer beetles (aka "broca"). You can see a farmer [holding up a plate] discussing a method of prevention that avoids the use of harsh pesticides.
