This is the washed process blend that we use in the shop for both our cold brew and nitro.
We get our Nicaraguan coffee from the amazing Herrera family. The clan consists of Francisco, Rojer, Ronnie, and Don Cesar. They are continually experimenting and improving their coffee knowledge and skills. They got a jumpstart in coffee education when they inherited their first farm back in 2006 but had to wait until 2012 for their coffee production. (It takes 5 to 6 years for the coffee plant to mature.) Stumptown helped them with their coffee education. They had to retrain a lot of their coffee pickers to pick for ripeness instead of by volume. This led to them entering the Cup of Excellence competition. Mike Love met with them through the competition as a judge, forming a partnership right then and there. Since then the Herrera family has faced problems with the dreaded coffee rust. Had to replant some lots due to bad varietals growing for that elevation. They have also had to fight cocaine farmers trying to secretly plant their crops on the Herrera estate. The Herrera family has 2 main farms in Segovia; Quemada and Cascada. This is right by the Honduras and Nicaragua border.
